We had a wonderful beet crop this season.
I always cook them the same way – steamed or roasted with a little butter, salt and pepper. They’re delicious.
But after supper upon supper of beets done in the same way, I decided to try something new. Shake things up a bit 🙂
Roasted beet and orange salad – a variation of Martha Stewart’s recipe. I’m sure her recipe would be tasty as is – but I didn’t have any arugula or goat cheese on hand. So I made do. I used the same dressing.
The deep red and orange colours make a lovely presentation on the table. And the earthy, sweet flavour of roasted beets blends perfectly with oranges. I think an orange juice, vinegar and honey dressing would work well too.
As my mother would say, “It tasted good, even if I say so myself!” 🙂
